Vanilla Cake Recipe

Ingredients:

  • 2 ½ cups (320g) all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup (240g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs, at room temperature
  • 1 tbsp vanilla extract
  • 1 cup (240ml) whole milk, at room temperature

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.

  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

  3. Cream butter and sugar: In a large mixing bowl, beat the butter and sugar together using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.

  4. Add eggs and vanilla: Add the eggs one at a time, beating well after each addition. Then, mix in the vanilla extract.

  5. Alternate adding dry ingredients and milk: With the mixer on low speed, alternate adding the dry ingredients and the milk in three additions, starting and ending with the dry ingredients. Mix until just combined; do not overmix.

  6. Pour batter into pans: Divide the batter evenly between the two prepared cake pans.

  7. Bake the cake: Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

  8. Cool the cakes: Allow the cakes to cool in the pans for 10 minutes. Then, remove from the pans and let them cool completely on a wire rack.

  9. Frost: Once the cakes are completely cool, frost with your favorite frosting, such as buttercream, cream cheese frosting, or chocolate ganache.
